- 3 cups brown rice pasta Alternatively use zucchini noodles
- 1.5 cups cremini mushrooms
- 1 medium red onion
- 1 red bell pepper
- 1.5 cups spinach
- 3 cups tomato sauce
Instructions
- Grind mushrooms, red onion and bell pepper in the food processor.
- Add tomato souse, season and simmer.
- Serve over cooked pasta.
