Zucchini Coconut Flour Pizza Crust

Ingredients

  • 1 medium zucchini finely shredded (about 2 cups)
  • 1/3 cup egg whites
  • 1 egg
  • 2 tbsp coconut flour
  • 1/2 tsp baking powder
  • 1/2 - 1 tsp italian seasoning
  • 1/8 tsp garlic powder
  • 1/8 tsp pink salt

Instructions

  • Preheat oven to 450 degrees
  • Line baking sheet or pizza pan / stone with parchment paper
  • Steam zucchini on stovetop for a 2-3 minutes or microwave for 1 minute
  • Wring as much moisture as possible out of zucchini with tea towel
  • In medium bowl, whisk together egg, egg whites, baking powder, and spices
  • Spoon mixture onto baking sheet and flatten evenly into circle or rectangle about 1/4 inch thick
  • Bake about 10-12 minutes, until starting to brown
  • Remove from oven to add sauce, cheese, and desired toppings then baking another few minutes until cheese is melted
