Ingredients
- 1/2 cup coconut flour
- 1 tbsp cinnamon
- 1/2 tsp nutmeg
- 3/4 tsp baking soda
- 1/2 tsp pink salt
- 4 eggs
- 24-36 drops SweetLeaf Stevia
- 1 cup zucchini shredded finely
- 1 ripe banana mashed
- 1 tbsp coconut oil
Instructions
- Preheat oven to 350 degrees
- Grease a bread loaf pan or line with parchment paper
- Shred zucchini finely
- Place shredded zucchini in kitchen towel and squeeze all the moisture out of it
- Process eggs, Stevia, coconut flour, oil, and banana together in food processor
- Stir cinnamon, nutmeg, salt, baking soda, and zucchini into mixture until the batter is smooth
- Pour batter into loaf pan
- Bake for 45-50 minutes (or until a toothpick inserted into the center comes out clean)
- Allow to cool
- Remove from loaf pan and slice into 8 slices
