Ingredients

  • 1 tbsp coconut oil
  • 3/4 cup egg whites
  • 1 small apple
  • 2 cups spinach
  • 1/4-1/2 tsp cinnamon
  • 1/4-1/2 tsp basil
  • pink salt to taste

Instructions

  • Melt coconut oil in skillet over medium-high heat
  • Sauté apple and spinach until soft
  • Stir in cinnamon and basil
  • Pour egg whites into skillet and stir until bottom is coated
  • Place lid on skillet, reduce heat, and cook until eggs are bubbly
  • Flip and cook on other side
