Ingredients

  • 8 carrots shredded
  • 1 zucchini shredded
  • 6 celery stalks shredded
  • 1/4 cup chopped red onion optional
  • 4 tbsp parsley
  • 1 tsp celery seed
  • 1 cup avocado
  • 1/4 cup lime juice
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 cup plain fefir
  • 1/2 tsp pink salt
  • 1/4 tsp pepper
  • 1/4 tsp liquid Stevia

Instructions

  • Combine carrots, zucchini, celery, parsley, celery seed, and onion (if desired) in a medium mixing bowl
  • Place avocado, lime juice, olive oil, vinegar, kefir, salt, pepper, and stevia in blender or Magic Bullet and pulse until dressing is smooth and creamy
  • Pour dressing over slaw and stir 
  • Cover and place in fridge until ready to eat
