Ingredients
- 8 carrots shredded
- 1 zucchini shredded
- 6 celery stalks shredded
- 1/4 cup chopped red onion optional
- 4 tbsp parsley
- 1 tsp celery seed
- 1 cup avocado
- 1/4 cup lime juice
- 1 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 cup plain fefir
- 1/2 tsp pink salt
- 1/4 tsp pepper
- 1/4 tsp liquid Stevia
Instructions
- Combine carrots, zucchini, celery, parsley, celery seed, and onion (if desired) in a medium mixing bowl
- Place avocado, lime juice, olive oil, vinegar, kefir, salt, pepper, and stevia in blender or Magic Bullet and pulse until dressing is smooth and creamy
- Pour dressing over slaw and stir
- Cover and place in fridge until ready to eat
