Ingredients

  • 1.5 cups almond flour
  • 1/4 cup coconut flour
  • 1 cup pumpkin puree
  • 1/2 cup unsweetened applesauce
  • 1/3 cup water
  • 2 eggs
  • 3 tbsp coconut oil
  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 1.5 tsp pumpkin pie spice
  • 1 tsp lemon juice
  • 1 tsp vanilla

Instructions

  • Preheat oven to 350 degrees
  • Grease 9x4 loaf pan
  • Whisk together almond flour, coconut flour, baking soda, baking powder, salt, and pumpkin pie spice in large bowl
  • In another bowl, whisk together pumpkin puree, lemon juice, applesauce, water, coconut oil, eggs, and vanilla
  • Slowly add flour mixture to pumpkin mixture and stir until blended
  • Pour batter into loaf pan and bake 50-60 minutes, or until cooked through and toothpick inserted in center comes out clean
