Ingredients
- 1.5 cups almond flour
- 1/4 cup coconut flour
- 1 cup pumpkin puree
- 1/2 cup unsweetened applesauce
- 1/3 cup water
- 2 eggs
- 3 tbsp coconut oil
- 1.5 tsp baking powder
- 1.5 tsp baking soda
- 1.5 tsp pumpkin pie spice
- 1 tsp lemon juice
- 1 tsp vanilla
Instructions
- Preheat oven to 350 degrees
- Grease 9x4 loaf pan
- Whisk together almond flour, coconut flour, baking soda, baking powder, salt, and pumpkin pie spice in large bowl
- In another bowl, whisk together pumpkin puree, lemon juice, applesauce, water, coconut oil, eggs, and vanilla
- Slowly add flour mixture to pumpkin mixture and stir until blended
- Pour batter into loaf pan and bake 50-60 minutes, or until cooked through and toothpick inserted in center comes out clean
