Ingredients
- 4 chicken tenders
- 1/4 cup coconut shredded, unsweetened
- 1/4 cup egg whites or 1 egg
- 2 tsp coconut oil
- 1/2 cup crushed pineapple unsweetened
Instructions
- Dip chicken pieces in egg
- Heat coconut oil in frying pan
- Coat egg dipped chicken in shredded coconut, pressing down to even out the thickness of the chicken
- Sauté coated chicken in 1 tsp coconut oil until browned, turn over and brown on other side using remainder of coconut oil
- In a separate pan, heat crushed pineapple until juice slightly thickens
