  • 4 chicken tenders
  • 1/4 cup coconut shredded, unsweetened
  • 1/4 cup egg whites or 1 egg
  • 2 tsp coconut oil
  • 1/2 cup crushed pineapple unsweetened


  • Dip chicken pieces in egg
  • Heat coconut oil in frying pan
  • Coat egg dipped chicken in shredded coconut, pressing down to even out the thickness of the chicken
  • Sauté coated chicken in 1 tsp coconut oil until browned, turn over and brown on other side using remainder of coconut oil
  • In a separate pan, heat crushed pineapple until juice slightly thickens
