  • 1 egg beaten
  • 1 tbsp unsweetened almond milk or coconut milk
  • 1 tbsp coconut flour
  • 1/2 tbsp butter or coconut oil melted
  • 1/2 tsp baking powder
  • 6 drops Stevia optional
  • 1 pinch pink salt optional


  • Melt butter/oil in round ceramic / glass ramekin
  • Add all ingredients to the ramekin, except baking powder, and stir with a fork
  • Add baking powder and stir in well
  • Stir, scraping sides, until clump free
  • Cook in microwave for 1 minute and 30 Seconds, or bake in oven at 400 F for 12-15 minutes, until middle is firm
  • Loosen edges by taking knife between muffin and ramekin
  • Cool, enough to handle, then remove from bowl and cut in half sideways
  • Toast in buttered/oiled frying pan, until lightly browned on each side (like a pancake), using spatula to press the tops of muffin down lightly
