Ingredients
- 1 egg beaten
- 1 tbsp unsweetened almond milk or coconut milk
- 1 tbsp coconut flour
- 1/2 tbsp butter or coconut oil melted
- 1/2 tsp baking powder
- 6 drops Stevia optional
- 1 pinch pink salt optional
Instructions
- Melt butter/oil in round ceramic / glass ramekin
- Add all ingredients to the ramekin, except baking powder, and stir with a fork
- Add baking powder and stir in well
- Stir, scraping sides, until clump free
- Cook in microwave for 1 minute and 30 Seconds, or bake in oven at 400 F for 12-15 minutes, until middle is firm
- Loosen edges by taking knife between muffin and ramekin
- Cool, enough to handle, then remove from bowl and cut in half sideways
- Toast in buttered/oiled frying pan, until lightly browned on each side (like a pancake), using spatula to press the tops of muffin down lightly
