Ingredients

Crust

  • 1 cup almond meal
  • 1 tbsp cinnamon
  • 1/2 tsp vanilla
  • 2 tbsp butter
  • Stevia, to taste

Filling

  • 1/4 cup melted coconut oil
  • 3 tbsp unsalted butter
  • 4 oz cream cheese
  • 2 tbsp lime juice
  • Stevia, to taste
  • optional - a few fresh spinach leaves (for green color)

Instructions

  • Preheat over to 350 degrees
  • Mix all crust ingredients together
  • Put 1 teaspoon of crust mix in bottom of each mini cupcake tin in tray
  • Bake 7 minutes
  • Remove from oven and let cool
  • Blend filling ingredients until smooth
  • Put 1 tablespoon of filling on top of each crust
  • Freeze for 1 hour
