Ingredients
Crust
- 1 cup almond meal
- 1 tbsp cinnamon
- 1/2 tsp vanilla
- 2 tbsp butter
- Stevia, to taste
Filling
- 1/4 cup melted coconut oil
- 3 tbsp unsalted butter
- 4 oz cream cheese
- 2 tbsp lime juice
- Stevia, to taste
- optional - a few fresh spinach leaves (for green color)
Instructions
- Preheat over to 350 degrees
- Mix all crust ingredients together
- Put 1 teaspoon of crust mix in bottom of each mini cupcake tin in tray
- Bake 7 minutes
- Remove from oven and let cool
- Blend filling ingredients until smooth
- Put 1 tablespoon of filling on top of each crust
- Freeze for 1 hour
