Ingredients

  • 1.5 cup frozen chopped kale
  • 1 egg
  • 1/2 cup egg whites
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • additional seasoning, if desired
  • pink salt, to taste

Instructions

  • Season kale with spices
  • Steam seasoned kale
  • Heat 2 tablespoons water in skillet over medium-high heat
  • Place steamed kale in skillet
  • Season eggs and whisk together in bowl
  • Pour eggs over kale
  • Place lid on skillet and cook until eggs are cooked through
  • Slide off skillet and onto plate
  • Sprinkle with pink salt
