Ingredients
- 3.5 oz shrimp or scalops
- 6 cloves garlic crushed
- 24 oz whole peeled tomatoes with liquid chopped
- 1.5 tbsp salt
- 1 tsp crushed red pepper flakes
- 1 tbsp chopped fresh parsley
Instructions
- Sauté garlic over medium heat in a nonstick skillet
- When garlic starts to sizzle, pour in tomatoes
- Season with salt and red pepper
- Bring to a boil
- Lower heat and simmer for 30 mins, stirring occasionally
- Cook shrimp (or scallops) in nonstick pan for 2 minutes, stirring frequently, or until shrimp turn pink
- Add shrimp to tomato mixture and stir in parsley
- Cook for 3-4 minutes or until the sauce just begins to bubble
- Serve
