Dairy-Free Crustless Brownie Cheesecake

Ingredients

  • 1/2 cup coconut flour
  • 1/2 cup unsweetened applesauce
  • 1 cup water
  • 2 tbsp flax meal
  • 1 tsp vanilla extract
  • 2 tbsp coconut oil melted
  • 6 tbsp unsweetened cocoa powder
  • 1/4 tsp pink salt
  • 1/4 tsp baking soda
  • 3 tbsp FiberYum IMO Syrup

Instructions

  • Preheat oven to 350 degrees
  • Line an 8 inch round cake pan with parchment paper
  • Whisk applesauce, water, vanilla, coconut oil, and IMO syrup together in bowl
  • In separate bowl, stir together coconut flour, flax meal, cocoa powder, pink salt, and baking soda
  • Pour dry ingredients into wet and stir well
  • Pour batter into cake pan and smooth evenly with spatula
  • Bake for 16 minutes (Batter will still look very underdone)
  • Let cool then transfer to refrigerator until firm
  • Slice into 8 even triangles
