Ingredients
- 4 tbsp egg whites
- 1 egg
- 1/4 cup unsweetened almond milk
- 1/8 tsp baking soda + 1/2 tsp vinegar or 1/2 tsp baking powder
- 1/4 tsp cinnamon
- 1/2 tsp vanilla if desired
- 2 tbsp flax meal
- 2 tbsp coconut flour
Instructions
- Heat skillet to medium-high
- Whisk eggs and almond milk in liquid measuring cup with pour spout until well
- Stir in baking soda/vinegar (or baking powder), cinnamon, and vanilla, if desired
- Stir in coconut flour and flax meal
- Lightly grease skillet
- Pour pancake sized amount of batter into skillet
- Allow to cook on one side until fluffy and bubbly in center
- Flip and cook on other side
These are AWESOME served with Coconut Butter spread on top and Mock Pancake Group
