- 4 tbsp egg whites
- 1 egg
- 1/4 cup unsweetened almond milk
- 1/8 tsp baking soda + 1/2 tsp vinegar or 1/2 tsp baking powder
- 1/4 tsp cinnamon
- 1/2 tsp vanilla if desired
- 2 tbsp flax meal
- 2 tbsp coconut flour
Get Recipe Ingredients
Heat skillet to medium-high
Whisk eggs and almond milk in liquid measuring cup with pour spout until well
Stir in baking soda/vinegar (or baking powder), cinnamon, and vanilla, if desired
Stir in coconut flour and flax meal
Lightly grease skillet
Pour pancake sized amount of batter into skillet
Allow to cook on one side until fluffy and bubbly in center
Flip and cook on other side
These are AWESOME served with Coconut Butter spread on top and Mock Pancake Group
