Ingredients

  • 1 banana
  • 1 egg
  • 1 tbsp egg whites
  • 1 tbsp coconut flour
  • 1/8 tsp baking soda + 1/2 tsp vinegar or 1/2 tsp baking powder
  • 1/2 tsp vanilla if desired

Instructions

  • Heat skillet to medium-high
  • Mash banana in liquid measuring cup with pour spout
  • Add in eggs and whisk until well combined
  • Stir in baking soda/vinegar (or baking powder) and vanilla, if desired
  • Stir in coconut flour
  • Lightly grease skillet
  • Pour pancake sized amount of batter into skillet
  • Allow to cook on one side until fluffy and bubbly in center
  • Flip and cook on other side
