Chocolate Pumpkin Pie Cups

Ingredients

  • 2 tbsp pumpkin puree
  • 2 tbsp almond butter
  • 1/4 cup cocoa powder plus a tablespoon of cocoa powder
  • 1/8 tsp cinnamon
  • 15 drops Stevia
  • pinch pumpkin pie spice optional
  • 1/4 cup coconut oil

Instructions

  • Melt coconut oil
  • Stir in cocoa powder and Stevia
  • Fill just the very bottoms of 10 mini cupcake liners, reserving the rest
  • Freeze 8-10 minutes
  • Meanwhile, combine all other ingredients and stir to form a paste
  • Take liners from freezer and top each with 1 teaspoon filling
  • Cover with more chocolate, and freeze until solid (You will have leftover chocolate mixture)
