Ingredients
- 1 cup almond butter
- 1/2 cup apple sauce unsweetened
- 1 egg
- 2 tbsp coconut flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp pink salt
- 1/4 tsp ground cloves
- 1/4 tsp ginger
- pinch nutmeg
- 1/2 apple, large peeled and finely diced
Instructions
- Preheat oven to 350 degrees
- Line baking sheets with parchment paper
- Mix almond butter, egg, and apple sauce in large bowl with hand mixer (or in food processor)
- Add in coconut flour, baking soda, and spices then blend until combined
- Fold in diced apple with spatula
- Spoon about 1 tbsp batter at a time onto 2 baking sheets and spread into 20 circles
- Bake 8-12 minutes, until edges of cookies are slightly firm or dry to the touch and top of cookies no longer look wet
- Remove from oven and let cool for 5 minutes on baking sheet
- Transfer to wire cooling rack to finish
