Ingredients

  • 1 cup almond butter
  • 1/2 cup apple sauce unsweetened
  • 1 egg
  • 2 tbsp coconut flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp pink salt
  • 1/4 tsp ground cloves
  • 1/4 tsp ginger
  • pinch nutmeg
  • 1/2 apple, large peeled and finely diced

Instructions

  • Preheat oven to 350 degrees
  • Line baking sheets with parchment paper
  • Mix almond butter, egg, and apple sauce in large bowl with hand mixer (or in food processor)
  • Add in coconut flour, baking soda, and spices then blend until combined
  • Fold in diced apple with spatula
  • Spoon about 1 tbsp batter at a time onto 2 baking sheets and spread into 20 circles
  • Bake 8-12 minutes, until edges of cookies are slightly firm or dry to the touch and top of cookies no longer look wet
  • Remove from oven and let cool for 5 minutes on baking sheet
  • Transfer to wire cooling rack to finish
