Preheat oven to 350 degrees
Line baking sheets with parchment paper
Mix almond butter, egg, and apple sauce in large bowl with hand mixer (or in food processor)
Add in coconut flour, baking soda, and spices then blend until combined
Fold in diced apple with spatula
Spoon about 1 tbsp batter at a time onto 2 baking sheets and spread into 20 circles
Bake 8-12 minutes, until edges of cookies are slightly firm or dry to the touch and top of cookies no longer look wet
Remove from oven and let cool for 5 minutes on baking sheet
Transfer to wire cooling rack to finish
