Ingredients
- 4 eggs
- 1/2 cup pumpkin puree canned
- 2 tsp stevia extract more or less, to taste
- 2 tsp vanilla extract
- 3 large bananas, very ripe or four small bananas
- 1/8 tsp pink salt
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1.2 oz Trader Joe's freeze-dried Fuji apple slices, crushed or 2 Fuji apples, chopped
Instructions
- Preheat oven to 350 degrees
- Grease 9" cake pan
- Place all ingredients, except apples, into blender or food processor
- Process until smooth
- Stir in apples
- Pour into cake pan
- Bake for 55-60 minutes, until toothpick inserted in center comes out clean
- Allow cake to cool completely in pan before removing
- Slice and serve once cooled
- Can be stored, loosely covered, at room temperature for up to 3 days
