Ingredients
- 3 hard boiled eggs discard 1 yolk
- 8 oz chopped celery
- 1 tbsp apple cider vinegar
- 1/4 tsp dill
- 1/8 tsp smoked paprika
- 1 tsp Dijon mustard
- pink salt and pepper, to taste
Instructions
- Place 2 egg yolks in bowl (reserve egg whites)
- Stir in apple cider vinegar, mustard, dill, paprika, pink salt, and pepper
- Chop egg whites and add to mustard/egg yolk mixture
- Stir in celery until well coated
- Sprinkle with extra smoked paprika, if desired
