Ingredients

  • 1 lb ground turkey
  • 2 cups pumpkin puree
  • 2 cups edamame
  • 2 cups chicken stock
  • 2 cups unsweetened almond milk
  • 1 large onion chopped
  • 4 tbsp pumpkin pie spice
  • 2 - 3 tbsp minced garlic
  • 2 tbsp coconut oil
  • 2 dropperfuls Stevia

Instructions

  • Melt coconut oil in large saucepan over medium-high heat
  • Add chopped onions, garlic, and turkey and cook until turkey is cooked through
  • Stir in chicken stock, pumpkin, almond milk, edamame, stevia, and pumpkin pie spice
  • Place lid on saucepan, reduce heat, and cook another 10-15 minutes, stirring occasionally
