Ingredients
- 1 lb ground turkey
- 2 cups pumpkin puree
- 2 cups edamame
- 2 cups chicken stock
- 2 cups unsweetened almond milk
- 1 large onion chopped
- 4 tbsp pumpkin pie spice
- 2 - 3 tbsp minced garlic
- 2 tbsp coconut oil
- 2 dropperfuls Stevia
Instructions
- Melt coconut oil in large saucepan over medium-high heat
- Add chopped onions, garlic, and turkey and cook until turkey is cooked through
- Stir in chicken stock, pumpkin, almond milk, edamame, stevia, and pumpkin pie spice
- Place lid on saucepan, reduce heat, and cook another 10-15 minutes, stirring occasionally
