Ingredients

  • 1/4 cup almond flour
  • 1/8 tsp baking soda + 1/2 tsp vinegar or 1/2 tsp baking powder
  • 1 tbsp coconut oil melted
  • 1 egg lightly beaten
  • 1 tbsp lemon juice
  • 6 drops plain Stevia
  • 3 - 5 drops vanilla creme stevia or lemon drop if you want more tang
  • 1/2 tbsp chia seeds

Instructions

  • Combine all ingredients in a mug (or in bowl and transfer to muffin tin)
  • Microwave for 1 minute 30 seconds (or bake at 375 degrees for 10 minutes or until toothpick comes out clean)
