Taco Dip with Red Pepper "Chips"

- 8 oz ground beef
- 2 tsp Taco Seasoning
- 1/2 red onion chopped
- 1 tomato diced
- 1/2 cup plain greek yogurt
- 4 tbsp salsa
- 1/2 avocado
- 1 tsp lemon or lime juice
- 2 red peppers sliced 1" thick
- salt & pepper, to taste
Brown ground beef in skillet over medium-high
Add Taco Seasoning, tomato, and onion and cook until veggies are tender
Remove from heat and stir in salsa and greek yogurt
Transfer into 2 bowls
Place red pepper strips into dip around bowl
Mash avocado, lemon/lime juice, salt, and pepper to taste in separate bowl
Top dip with avocado mixture
