Grease skillet with butter or coconut oil and heat to medium-low
Combine egg and egg whites in bowl
Whisk in coconut flour
Add in spices of choice and whisk again
Pour mixture into skillet and spread evenly
Cover with lid and cook for 3-4 minutes (until top starts to bubble)
Flip and cook, covered, another 2 minutes
Remove from skillet
