In a large bowl, whisk together the water, applesauce and extracts
In a small bowl, whisk together the cinnamon and xanthan gum (or flax/water mixture)
Slowly "dash" this into the wet ingredients while whisking
Once all is incorporated, whisk the entire mixture vigorously
Cover with plastic wrap and refrigerate overnight
The next day, pour the entire mixture into a blender or food processor and puree for 1-2 minutes, or until it gets a little lighter in color, more voluminous and is completely smooth
Pour syrup into bottle/jar, tightly seal and refrigerate to store
