Add 1/4 cup water to skillet over medium-high heat
Core apple and divide into quarters
Chop 1/4 apple coarsely and set aside
Cut remaining 3/4 apple into very thin slices
Add apple slices, pumpkin pie spice, and vanilla stevia to skillet
Cover and cook, stirring occasionally, until apple slices are softened
While apple slices are cooking, combine chopped 1/4 apple with cinnamon in Ziploc bag or Tupperware
Shake until chopped apples are well coated with cinnamon
Transfer cooked apple slices to plate (leave liquid in skillet) and top with cinnamon coated apples
Add additional water to skillet, if needed, and stir in leftover cinnamon
Cook, uncovered, until liquid reduces to sauce consistency
Drizzle cinnamon sauce over plated apples
