Preheat oven to 350 degrees
Melt coconut oil and chocolate together
Use a food processor or high-speed blender, and puree the avocado until smooth
Add all the ingredients, one at a time, and pulse until combined
Keep the batter in your fridge for an hour
Fill a pastry bag, or whatever you prefer using, and pipe batter onto a cookie sheet. (or form cookies with a spoon)
Bake cookies for 15-17 minutes
Let cool for at least 5 minutes before serving
