Bring water to boil in medium saucepan
Spiralize zucchini and place in boiling water
After zucchini noodles are cooked to desired consistency, remove from heat and strain
In second saucepan, combine 1/8 c water, garlic, grape tomatoes, and spices and bring to a boil then cover and reduce heat
Cook sauce ingredients until tomatoes start to pop open, stirring occasionally
Stir in tomato paste and extra water, if needed
Pour sauce over zoodles and serve
