- 8 oz enoki mushrooms
- 8 oz shrimp
- 1 red bell pepper sliced thin
- 4 oz mushrooms sliced thin
- 1 tbsp butter
- 1/2 lemon juice of half a lemon
- 1 - 2 cloves garlic minced
- 1 tsp ranch seasoning
- parsley as garnish
Get Recipe Ingredients
Melt butter in saucepan
Stir in garlic and lemon juice and cook, stirring, a few minutes
Add red pepper, mushrooms, ranch seasoning, and shrimp then cover and cook, stirring occasionally, until shrimp is cooked and veggies are softened
Boil water in separate saucepan
Add enoki mushrooms and boil about 5 minutes
Drain then stir enoki mushrooms to shrimp mixture
Garnish with parsley
